Preheat the oven to 400 degrees. Line a baking sheet with foil and lightly coat with cooking spray. Set aside.
In a large bowl, combine the ground turkey, Panko crumbs, egg, onions, celery, carrot and garlic, salt, and pepper. Using clean hands, mix until combined. Roll the mixture (⅛ level cup each, into 28 round meatballs.
Place meatballs onto the baking sheet and bake until cooked through and golden, about 16 to 18 minutes.
Remove meatballs from oven and place in a bowl. Add buffalo sauce and gently toss to combine. Serve immediately or reheat when ready to serve. Serve with skinny ranch dressing for dipping, on the side. Or, add the meatballs to a serving plate. Drizzle each with 1 teaspoon ranch dressing and add a toothpick to each, if desired.
