Skinny Korean Beef and Cauliflower Rice Bowls
I'm in love with this healthy rice bowl and hope you are too! Super easy to make, incredibly flavorful, naturally Paleo, gluten-free, dairy-free, and absolutely delicious! Each filling bowl has 270 calories, 9 grams of fat, and 7 Blue WW Freestyle Points and 6 Green. Dinner on the table in 30 minutes!

Ingredients for Sauce:

  • cup reduced-sodium soy sauce (Tamari for Paleo and Gluten-free)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 teaspoons ginger, from a jar or 1 tablespoon freshly grated ginger
  • 2 teaspoons sesame oil or olive oil
  • 1 teaspoon Sriracha, or more to taste, can substitute a few drops of hot sauce or a dash of red pepper flakes

Ingredients for Cauliflower Rice:

  • 1 (16 oz) bag riced cauliflower, I used Trader Joe’s, see shopping tips
  • ¼ cup water
  • 2 tablespoons reduced-sodium soy sauce (Tamari for Paleo and Gluten-free)
  • 1 teaspoon sesame oil or olive oil 
  • A little salt, pepper, and garlic powder, to taste

Ingredients for Beef:

  • 1 teaspoon sesame oil olive oil
  •  1 pound extra lean ground beef, I used organic, grass feed, see shopping tips
  • 1 cup onions, diced
  • 1 tablespoon garlic, minced
  • cups zucchini, chopped (heat 2 minutes in microwave to soften)
  • 1 teaspoon sesame seeds, optional or topping


  • To Make Sauce: In a small bowl, whisk together sauce ingredients. Set aside.
  • To Cook Cauliflower Rice in Microwave: Place cauliflower rice in a microwave-safe bowl. Add water, 2 tablespoons soy sauce, 1 teaspoon sesame oil and add a little salt, pepper, and garlic powder. Mix well. Cover with plastic wrap and microwave for 3 minutes. Remove from microwave, carefully lift plastic wrap, and stir with a fork. Cover and microwave for an additional minute or so, until soft.
  • To Cook Beef: Heat oil in a large nonstick pan over medium high heat. Add beef, onions, garlic, and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Pour beef into a colander in the sink to drain the excess fat. Add beef back to pan.
  • Add zucchini to a small bowl. Cook in microwave for 2 minutes until softened.
  • To the beef, add zucchini and stir in sauce. Mix well. Simmer until heated through, about 2 minutes.
  • To Serve: Add 1 cup cauliflower rice to each bowl. Top with 1 cup beef mixture with a little sauce. Mix to combine. garnished with sesame seeds, if desired.
  • Any leftovers freeze great. Mix together the beef mixture and cauliflower rice and pack in individual portion containers.



Food Facts
Cauliflower rice is amazing! It’s light and fluffy. It takes five minutes to make. It can replace couscous or rice in any dish, hot or cold.
One head cauliflower, shredded into very small pieces makes about 4-5 cups cauliflower rice.
Shopping Tips
Although there are more than a handful of ingredients for this recipe, if you make a lot of Asian dishes, these are stock ingredients you’ll use over and over again. I store soy sauce, rice vinegar, sesame oil, ginger in a jar, and sesame seeds in the refrigerator. Everything lasts a long time there.
Most supermarkets sell extra lean ground beef. I buy the 96% lean ground beef from Trader Joe’s. Most supermarkets sell extra lean ground beef. Sometimes I use grass-fed 94% lean ground beef  I buy at my local supermarket. You could also use ground turkey if desired.
If you have a Trader Joe’s in your town, they sell a 16-ounce bag of riced cauliflower. You will love it. It saves you a lot of time, not having to prep the cauliflower. In addition, many supermarkets, Target and Walmart carry Green Giant’s cauliflower rice in the produce section.
Sesame oil is sold in most supermarkets in the Asian section. I bought mine at Trader Joe’s.
If you are on a Paleo diet or Gluten-free, use a wheat-free soy sauce, Tamari. Here are a few brands to look for: San-J Organic Tamari Soy Sauce or Wan Ja Shan Organic Tamari Soy Sauce.
