Poached eggs never tasted better, cooked in a deliciously rich tomato sauce and topped with Parmesan cheese. You’ll think you’re having the most decadent meal but it’s very healthy. Makes for a wonderful for breakfast or dinner. Each very filling serving has 227 calories, 13 grams of fat and 7 Weight Watchers SmartPoints.

½ cup onions, diced
¼ cup red bell peppers, diced
1 tablespoon reduced-fat butter or Smart Balance light
1 teaspoon garlic, chopped
Salt and pepper, to taste
Small pinch of crushed red pepper
1 (8 ounce) can tomato sauce
½ teaspoon Italian seasoning
4 large eggs, I used Egg-Land Best eggs, see shopping tip
2 tablespoons Parmesan cheese, grated
1. Cook onions and red bell peppers in microwave for about 1 minute, to soften.
2. In a medium nonstick pan, heat butter over medium heat, add cooked onions/peppers, garlic and sauté for 1 minute. Stir often. Mix in Italian seasoning, a little salt, black pepper and a small pinch of red pepper flakes.
3. Stir in tomato sauce and simmer 5 minutes. Stir often. Gently drop in eggs. Be sure to keep the yolks in tact. Cover and simmer on medium-low heat for about 6-8 minutes, until the eggs whites are cooked through and the yolks are cooked to your liking.
4. To serve: Using a spatula, remove 2 eggs to each plate and add tomato sauce around it. Sprinkle each serving with 1 tablespoon Parmesan cheese.
Makes 2 servings. Each serving, 2 eggs, sauce and cheese.
Whenever I use eggs, I like to use Egg-land’s Best eggs. They have less saturated fat, less cholesterol, more Vitamin D, more Vitamin E and double the Omega 3 than regular eggs. They are sold in most supermarkets. That said, choose any large eggs you like to use.
Eggs made this way are called, Eggs “Alla Pizzaiola.” It literally means “made in the way of a pizza” that usually has the same taste of pizza.
