Simple is sensational with this delicious, healthy, grilled cheese sandwich! The avocado really adds a wonderful buttery flavor. It’s terrific for a quick lunch or dinner. I’ve even enjoyed it for breakfast! One grilled sandwich has 204 calories, 10 grams of fat and 6 Weight Watchers SmartPoints. Each sandwich is packed with 6 grams of fiber!

Cook Time: 4 minutes
1 sandwich thin, I used Oroweat honey whole wheat or use your favorite sandwich thin
½ teaspoon light butter
2 tablespoons avocado, mashed (about ¼ avocado)
Salt and pepper, if desired
1 large slice tomato
1 slice (¾ oz) Lite Jarlsberg (reduced-fat Swiss cheese) or your favorite, see shopping tips
1. Spread the outside of each piece of sandwich thin with ¼ teaspoon butter. Spread the inside bottom of ½ sandwich thin with mashed avocado. Sprinkle top of avocado with a little salt and pepper, if desired. Add tomato slice and cheese. Top remaining sandwich thin.
2. In a nonstick pan, add sandwich and cook for 2 minutes on medium-high heat. Using a spatula, turn over and continue to cook for about 1-2 minutes until browned on each side.
3. Remove to plate.
Makes 1 sandwich
I used Jarsberg Lite (reduced-fat Swiss cheese) and found it at Trader Joe’s. Many supermarkets sell this type of cheese. Or use ¾ oz of your favorite reduced-fat cheese, sliced or shredded.
