Skinny Garlic Mashers (Dairy-Free, Gluten-Free)

These potatoes are simple to make and really, really delicious! Perfect for anyone who lactose intolerant, gluten free or not. They will make everyone happy! You won’t miss the dairy at all. They’re velvety with great flavor. Each serving has 79 calories, 1 gram of fat and 2 Weight Watchers SmartPoints.

Ingredients

1½ pounds red potatoes (new potatoes) cut into even sized chunks

3 garlic cloves, smashed

2 tablespoons Smart Balance Light, see healthy benefits and shopping tips

¾ cup reduced-sodium chicken broth, see shopping tips

Salt and pepper, to taste

½ teaspoon garlic powder

Scallions or chives, chopped for topping (optional)


Instructions

1. Add potatoes and smashed garlic cloves to a pot and cover with cold water. Bring to a boil, cover and turn heat down. Simmer for about 15-20 minutes, until tender.

2. Drain potatoes in a colander and place drained potatoes back in pot. Add Smart Balance. Using a potato masher or the back of a fork, smash the potatoes. Add chicken broth, salt, pepper and garlic powder, to taste. Turn flame to medium. Continue to mash potatoes until fairly smooth and all ingredients are heated. They will be a little rustic due to the skins left on. Add more salt, pepper and garlic powder, to taste. Top with chopped scallions or chives, if desired.

3. This recipe can be easily doubled, tripled and so on.

Makes 4 cups total. Each serving ½ cup (8 servings)
