This is not by any means your typical coleslaw.  It’s so tasty and satisfying you might just want to serve it as a main-course salad.  In addition, the crunchy cabbages, chopped apple, walnuts and dried cranberries are all tossed in a dreamy homemade honey mustard dressing.  It’s chock full of great-for-you ingredients.  This is sure to become your favorite go-to side salad this season.

Prep Time: 15 minutes

Slaw Ingredients

3 cups shredded purple cabbage

3 cups shredded green cabbage

2 cups (about 1 large) chopped red apple such as Honeycrisp, Gala, or Fuji or your favorite

⅓ cup dried cranberries

⅓ cup chopped walnuts

Honey Mustard Dressing Ingredients

½ cup Nancy’s Skinny Ranch Dressing or light mayonnaise

4 teaspoons honey

1½ teaspoons Dijon mustard

1 teaspoon yellow mustard

Instructions

1. In a large bowl add all the slaw ingredients. Refrigerate until ready to serve

2. In a small bowl whisk together all the dressing ingredients.  Refrigerate until ready to use.

3. Toss the slaw with the dressing just before serving.

Serves 8 side salads or 4 main course salads

Healthy Benefits

Cabbage contains a good amount of vitamins C, A and fiber.

Apples are a rich source of flavonoid and polyphenols. Both are powerful antioxidants.

Walnuts are great source of those all-important omega-3 fatty acids.

Cranberries have been valued for their ability to reduce the risk of urinary infections for hundreds of years.

Prep Tips

To make this salad easy to prep, buy already shredded bags of cabbage.  If you have any leftover cabbage, toss into any type of salad. It adds texture and crunch.

This slaw and dressing can be prepared earlier in the day. To keep this slaw or any slaw from getting soggy, don’t toss in the dressing until ready to serve.

Serving Tip

This slaw will make 4 wonderful vegetarian main course salads. You can add a little reduced-fat cheese to make it more substantial.  Chicken also taste great added to this slaw
