Endive and Stilton Salad
This first course salad is simple and truly elegant. The natural sweetness of the pears, the crunch of the endive and walnuts, works great pared with the Stilton blue cheese. We’re adding real blue cheese but a small amount. We’re thrilled that our skinny salad has just 190 calories and 12 grams of fat. A full fat recipe will add 510 calories and 41 grams of fat! Prep time: 15 minutes (including dressing)
Ingredients
1 recipe Champagne Vinaigrette (recipe follows)
1/3 cup walnuts, chopped
1 1/2 tablespoons sugar
3 cups Belgian endive, roughly chopped (4 to 6 heads)
2 pears, quartered, cored and thinly sliced
1/3 cup Stilton blue cheese, crumbled
Instructions
1. Prepare the Champagne Vinaigrette and refrigerate until ready to toss.
2. In a dry pan add the walnuts and sugar, cook over medium heat. Stir until the sugar starts to melt. Transfer to a plate to cool.
3. In a large salad bowl, add the endive, pears, blue cheese and sugared walnuts.
4. Toss with 1/2 cup of dressing to start. Add more if desired.

Stilton blue cheese is often referred to as the “King of Cheeses.” Stilton is a sharply flavored English blue cheese.
Endive is a leafy vegetable of the Asteraceae family (one of the largest plant families). Belgian endive has long, pointy, tightly-furled white leaves, and a slightly bitter taste.
Shopping Tip
If you can’t find Stilton blue cheese you can substitute other blue cheese such as Gorgonzola, Maytag, or Saga.

Champagne Vinaigrette
This wondrous dressing is quite effortless to make. Our Champagne vinaigrette adds a light touch with only 36 calories and 3 grams of fat for a 2 tablespoons serving. A full fat dressing will set you back 206 cal, and 22g fat for just 2 tablespoons. Its grand served on the Endive and Stilton salad but is also tasty on a simple green salad.
Prep time: 5 minutes
Ingredients
1/2 cup Nancy’s Skinny Ranch Dressing
3 tablespoons Champagne vinegar
1 tablespoon extra virgin olive oil
2 teaspoons sugar
1/2 teaspoon garlic from a jar (or 1 clove)
1/2 teaspoon Dijon mustard
Instructions
1. In a small bowl, whisk together all of the ingredients.
2. Pour into an airtight container and store in the fridge.
3. Champagne Vinaigrette will keep for up to 1 week

Champagne vinegar is made from Champagne grapes. It has a delicate, subtle sweet, floral flavor.

Today Champagne vinegar can be found in most supermarkets. If you can’t find it, you can substitute white wine vinegar.
