Crock-Pot, Skinny Spiral Ham (Paleo, Gluten-free)

For a delicious and easy ham, try this crock-pot recipe. It’s much lighter tasting than the typically honey baked ham. That type of ham taste amazing but usually smothered with tons of honey and brown sugar. Here the delightful flavors come from a small amount of honey, pineapple juice and pineapple chunks. Each serving, including carrots and pineapple, has 247 calories, 9 grams of fat and 6 Weight Watchers SmartPoints.

Prep Time: 10 minutes

Crock-Pot Time: 3 hours on Low Heat


1 Trader Joe’s spiral cut, uncured (about 4 pounds, fully cooked) or your favorite, see shopping tips

1 cup onions, chopped

1 (16 oz) bag baby carrots, cut each in half or keep whole, if desired

1 (8 oz) can pineapple chunks, unsweetened

⅓ cup honey

1 (6 oz) can pineapple juice, unsweetened

2 tablespoons reduced-sodium soy sauce

2 teaspoons fresh garlic, minced

Black pepper, to taste


1. Place carrots in a microwave-safe bowl. Add a small amount of water. Cover and cook in microwave for 2-3 minutes, to slightly soften. Do not cook until completely soft. They will finish cooking in the crock-pot. Drain water. 

2. Place ham, flat side down, in a large crock pot. If your ham comes with a glaze packet, throw it out along with any plastic pieces that cover the bone. Add softened carrots all over the sides and sprinkle onions all over top and sides. Pour the can of pineapple chunks, with juice all over the carrots.

3. In a small bowl, whisk together pineapple juice, honey, soy sauce, garlic and a little pepper. Pour all over top of ham and over carrots and onions. 

4. Cover and cook on low heat for 3 hours. Baste ham with juices from bottom of crock-pot, a few times throughout the cooking.

Makes 12 servings (each serving 4 ounces ham, carrots, pineapple and sauce.

Food Fact
With spiral cut hams, the slicing is done on a special cutting machine that spins the ham around while cutting thin slices through to the bone in a continuous spiral.


Shopping Tips
If you have a Trader Joe’s in your area, I highly recommend buying their ham. It’s uncured which means nitrate-free! Although they come with a glaze packet, I’m including my own sauce recipe above. If you want to buy a larger ham, you’ll need to increase the amount of sauce to my recipe.

If you don’t have a Trader Joe’s in your area, most health food stores sell uncured hams. Or, most supermarkets sell bone-in spiral cut hams (precooked)
