Monday, May 21st, 2012

Kids and grownups alike love these bite size treats!  They are really simple to make and can be customized to your liking.  Sometimes I roll them in mini chocolate chips or English toffee bits but they taste great with just the cookies and ice cream. The key to making them skinny is using reduced-fat ice [...]

Skinny Italian Wedding Soup

Wednesday, May 16th, 2012

Italian Wedding Soup is a soup with a lot of fans. It’s a big hit at my house!  Traditionally made with pasta added, I’ve swapped the pasta for fiber rich beans. It’s the perfect marriage of flavors and texture in each spoonful. Interestingly enough the term “wedding” was a mistake in translation of sorts. It [...]

Skinny Tip of the Day

Monday, May 14th, 2012

Fresh garlic adds great flavor to a variety of recipes. It’s so healthy too. Garlic promotes circulation and helps lowers cholesterol. It also contains sulfur compounds that may prevent cancer growth. You can increase the health benefits you receive from garlic by letting it sit for about 10 minutes after you’ve chopped it before cooking it. [...]

Skinny Tip of the Day

It’s asparagus season and the markets are filled with this wonderful vegetable. To keep it fresh for several days,  cut off the ends and stand upright, unwashed, in a container. Add an inch of cold water, cover spears with a plastic bag and refrigerate. Refresh water as needed.
