Skinny Tip of the Day…

Wednesday, April 18th, 2012

Chopping onions can really irritate your eyes. But, if you light a candle nearby before getting started, the flame from the candle will neutralize the sulfuric fumes from the onions. Your eyes should stay clear so no more tears!

Skinny Grilled Ham and Cheese French Toast for a Quick Weeknight Dinner

Thursday, April 12th, 2012

Celebrate National Grilled Cheese Day with this delicious, quick to prepare dinner. It’s not at all like a typical grilled ham and cheese.  It’s very tasty with thin slices of dill pickle and mustard added, plus dipped into a buttermilk and egg batter before grilling.  A French toast of sorts.  It’s skinny due to using [...]

Nancy’s Healthy Kitchen’s Taco Salad

Monday, April 9th, 2012

Years ago I owned a very popular reduced-fat restaurant with two locations in the LA area called Nancy’s Healthy Kitchen.  This taco salad was by far the most popular item on the menu.  Some of our customers, including my husband, ate this delicious salad for lunch or dinner everyday for several years!  It’s such a [...]

Spectacular Roasted Vegetable Torte

Saturday, April 7th, 2012

You’ll love this colorful vegetable dish to serve along side just about any main course meat such as ham, beef, lamb, or even fish or chicken.  It’s one of my all time favorite recipes from the Barefoot Contessa cookbook.  It makes such a beautiful presentation and tastes amazing.  I’ve made it much skinnier by adjusting [...]

Delectable Egg Filled Cups for a Skinny Brunch

Saturday, April 7th, 2012

These egg filled cups makes a delicious breakfast or brunch. To create the cups I’m using high fiber English muffins. They’re filled with a healthy medley of sauteed spinach, garlic, onions and tomatoes, plus a combination of eggs and whites. Finally, they’re topped with fat-free feta cheese.  The skinny for 1 of these very filling [...]

Skinny Matzo Brei With Fresh Spinach, Garlic and Onions

Friday, April 6th, 2012

Matzo Brei [MAHT-suh bri] is one of the great traditional breakfast or brunch treats. Look on the menu of any Jewish delicatessen and you’ll see this popular dish.  Normally made by soaking matzo until soft, frying with eggs and serving with applesauce, cinnamon-sugar or jam on the side, I’m shaking things up a bit!  This [...]

Delectable Skinny Salad with Fruits, Nuts and Cheese

Friday, April 6th, 2012

I adore this vegetarian salad and make it all the time. It’s so colorful and full of texture and flavor. I especially love adding assorted fruits, a little chopped nuts and cheese to salad greens.  These flavors work really great together whether you’re serving it as a side salad or main course salad. It comes [...]

Springtime Ham, Asparagus and Cheese Melt

Thursday, April 5th, 2012

Sometimes the simple to prepare meals are the tastiest.  This open-faced delight surely delivers.  First, I’ve layered a skinny ham salad, steamed asparagus and reduced-fat cheese on top of toasted garlic bread. Next, placed in the oven to melt.  It might sound like a strange combination but wait until you taste it.  The skinny for 1 [...]
